I was doing so well with my weight loss progress. Then, I cancelled my gym membership and started eating unhealthy again. The results are terrible. In an effort to turn this around, I've turned to 'clean eating' and I'm hoping this will get me back on the right track. The first clean eating recipe that I made was dinner yesterday. I made a kale, quinoa, corn and tomato salad, that I served with chicken breast (seasoned only with a bit of oil, salt and pepper). The salad was wonderful! I can't wait to have leftovers for lunch today! I found the recipe on

Here is the delicious - and SUPER easy - recipe:
Ingredients:
1 cup of cherry tomatoes, halved
1/2 cup of corn
1 garlic clove
2 cups of kale
1 lemon, zest and juice
1 scallion
1 cup quinoa, cooked
salt and pepper
2 tbsp extra virgin olive oil
Recipe
Combine all ingredients in a large bowl and mix well.
